Make your own Mexican food

I tried out this dish sometime last week and it turned out pretty good. Here's what you need:
Minced beef
Kidney beans
Onion
Garlic
Tomato
Capsicum/Red chilli (whichever you prefer)

First, you fry the chopped onions, garlic, and capsicum / red chilli. I used cili padi cause I like HOT HOT HOT hehe.

Once it's about right, add in the diced tomatoes and kidney beans.

Add in the minced beef soon after. It will get rather wet as the juices from the beef come out. Let it fry till it dries. While you do that, get started on a side dish. Ingredients for side dish:
Capsicum
Cheddar cheese
Cream cheese
Corriander
Beef bacon

Slice 2 capsicums into half and remove the insides. Put in two scoops of cream cheese into each half and sprinkle the shredded cheddar cheese and corriander on top. Top it off with chopped beef bacon.
Pop inside the oven till the cheese melts and the capsicum starts to brown. Voila, you have stuffed peppers =)

Once your beef-kidney beans has dried up, serve it with soft tortillas. (I bought the tortillas in Giant)

Have fun trying it out!
